Crispy Salmon Poached Eggs

 

It’s the weekend! 🙂

One of my favourite things about the weekend are our family breakfasts. We try to keep one day of the weekend for just us, when we can make and enjoy breakfast together. We each have a special job that we’re responsible for in contributing to this fun meal; and the best part is that I take on an assistant role and my hubby is responsible for the main 😉

I love poached eggs, I love the runny yolk but also love how its such  alternative to a fried egg. I have never attempted to make them myself but would always order them when out for breakfast. One morning my hubby looked up how to poach an egg (got to love the internet) and he made it perfectly. Now I get spoilt with poached eggs on a regular basis, but I still don’t know how to make one, I leave it to him.

He gets very creative when putting together breakfast, especially when I am having something different (due to my dietary restrictions) from the others. Here is one of my favourite creations.

Crispy Salmon Poached Eggs:

  • 1 gluten free (or regular) slice of bread, toasted
  • sautéed spinach (sautéed with chopped onions and minced garlic)
  • sautéed smoked salmon (sauté desired amount of chopped smoked salmon in a skillet)
  • 2 medium poached eggs
  • sea salt and black pepper to taste

If you like smoked salmon you will love this, if not then make it without the salmon and you’ll still love it!

Remember eating healthy does not have to be boring, just have fun and get creative with alternatives.
