Vegetable Poached Eggs

One of my favourite things about the holidays is nice leisure breakfasts enjoyed with the family. I have to admit that weekend and holiday breakfasts are created courtesy of my hubby with some assistance of me. Having to restrict gluten did make breakfasts a bit of a trial at the beginning but with some imagination and substitutions they have become one of my favourite meals. Here is one of my favourites that is completely guilt free and delicious.

  • 2 soft poached eggs on a bed of:
  • sautéed spinach and vegetables seasoned with fresh garlic, salt and pepper.
